2. Baijiu Types and Categories

Baijiu can be classified into several types based on the type of grain used for fermentation, region, and production method. The most common categories are:

Sauce-fragrant baijiu: Made from wheat and sorghum, it has a complex and rich flavor, and is aged for several years to enhance the aroma.

Strong-aroma baijiu: It is made from sorghum and has a strong and pungent aroma. It is aged for a long time to improve the taste.

Light-aroma baijiu: It is made from rice and wheat, and has a light aroma and a mellow taste. It is usually consumed as a daily drink.

3. Production Process

The production of baijiu involves five steps: fermentation, distillation, aging, blending, and bottling. The grain is first washed, steamed, and mixed with yeast to start the fermentation process. After a few days, the fermented mixture is distilled in a pot still to obtain the alcohol. The distilled alcohol is then aged in earthen jars or oak barrels for a few months to several years to improve the aroma and flavor. The aged alcohol is blended with other alcohols to achieve a consistent flavor, and then bottled for distribution.

4. Baijiu Culture

Baijiu plays a significant role in Chinese culture and is often consumed during important events and gatherings, such as weddings and business meetings. It is also used as a gift to show respect and gratitude. Drinking baijiu is a social activity in China, and it is customary to offer a toast to others before drinking. The order of toasting is also important, and younger people should always toast before older people. Baijiu can be consumed straight, but it is usually watered down with cold water or ice to reduce its strength.
