龙虾泡在白酒里,短期内不会死还可以吐出沙泥。但如果时间长了就会死了。下面来看一道龙虾的做法。龙虾丸子制作所用的原料:龙虾仁(冻)(大家也可以选择鲜虾制作,这样口感更好,成本相对更高)肥膘肉(肥膘肉是增香的,也可以不放)葱花、姜末虾仁的处理:1、把清水倒入虾仁的盆子内,如果是把龙虾仁解冻化开,中间多换2次水这样虾仁化的快一点,这种冷冻的虾仁冰比较厚,2斤化开后剩余一斤,化开后的价格在42元左右一斤【500克】。2、把解冻好的虾仁捞出,用手挤掉多余的水份,然后放在菜墩上面用刀拍破,用刀这样拍能够提高效率,把拍破的虾仁砸成泥。3、把切好的姜末和葱花放进去一起砸,砸到虾仁都是比较小的颗粒状就可以了,从外表看好像已经起胶了,刀翻动比较黏,把虾仁泥放入盆子内。4、一斤虾仁加入8克盐,胡椒粉1克,肥膘肉100克,肥膘肉也可以不放,或者少放,放多了后味会有一点猪肉的香味,然后用手抓匀,并顺一个方向搅打上劲。5、搅打到起胶状态后加入清水,这里我们一共分了3次加入80克清水,把清水搅打进去之后再加入蛋清,1斤虾仁共加了2个蛋清,然后再把蛋清搅打到虾仁里面,还是要搅打上劲,最后再加入15克生粉,把生粉打匀即可。上火制作过程:1、锅内加水大火加热,烧开后调小火开始下入虾丸这样一直把虾丸挤完,如果想让虾丸更圆可以在手内多挤2次,挤完之后水烧开煮1分钟左右就成熟了。2、兑制一个碗底:盛器内加入紫菜、虾皮、盐、胡椒粉、味精,然后把煮好的虾丸和汤浇入盛器内,最后撒上香菜即可。
